Lincolnshire Poacher is a traditional English cheese with a flavour and texture that naturally varies throughout the year. Factors such as the season, stage of lactation, and weather all influence the finished cheese.

Each batch is graded at 12 months to determine its character and whether it is sold as Poacher or Vintage. Lincolnshire Poacher is typically matured for 14 to 16 months, developing a fuller flavour and firm texture.
